ACORN
SQUASH WITH BROWN RICE STUFFING |
INGREDIENTS
Acorn Squash
1/2 Cup of Water
COOKING DIRECTIONS
Wash squash. cut in
half crosswise. Scrape out seeds with a spoon. Trim
ends so squash halves will sit flat. place squash,
cut sides down, in a shallow baking pan that's been
sprayed with vegetable cooking spray. Pour water into
pan. Bake in 350° for 30 minutes. Turn cut sides up,
cover pan with foil and bake about 15 minutes or until
tender. Remove from oven, fill and mound with rice
stuffing, cover and bake until stuffing is just warm,
about 10-15 minutes. Serves 4.
- To Do Ahead:
- 1) Squash can be cooked a day
ahead, covered and refrigerated. bring to room temperature
before stuffing. Stuff squash and bake as directed.
- 2) Squash can be stuffed, covered
and refrigerated 1 day ahead. Bring to room temperature
before baking. Bake as directed.
