INGREDIENTS
4 large Rome apples
1-1/2 tsps. ground cinnamon
1/4 c. raisins
1/2 c. apple juice
3 tbsps. firmly packed brown sugar
2 tbsps. butter, melted (optional)
Core apples to within 1/2" from bottom. Place
apples in an 8" square baking dish. Combine raisins,
brown sugar and cinnamon. Spoon about 1 tbsp. mixture
into center of each apple. Pour apple juice into baking
dish. If desired, brush apples with melted butter. Cover
and bake 400° for 30-35 minutes or until apples are
tender. Serves 4.
To Do Ahead: Assemble apples
up to the point of baking. Cover and refrigerate up
to 24 hours. Bake, as directed before serving.
