Spinach Quiche

Crustless Spinach Quiche10 oz. pkg. frozen chopped spinach, thawed and drained well
1 c. cottage cheese
1/4 lb. cheddar cheese, shredded
1 small onion, sliced
1 tbsp. oil
1/4 tsp. garlic powder
pinch cayenne pepper
4 eggs
1/3 c. milk
1/2 tsp. dried basil

Preheat the oven to 325°. In the blender or food processor, blend cheeses, onions, oil,
seasonings, eggs, and milk until smooth. Pour into a bowl with spinach and blend
well. Grease 9″ pie plate. Pour in the mixture. Bake 35-45 minutes or until the knife
inserted in the center comes out clean. Stand 10 minutes before cutting.

Serves 4-6
